The thing I absolutely love about the holidays is the food. Ironically, the thing I also hate about the holidays is the food because no matter how much I try to avoid drowning myself in all that artery clogging madness, I just can’t. To be completely honest, I only stayed away from all the bingeing when I was on a countdown to my bathing suit encounter on the beach. At some point I actually fell quite ill from all that eating.

So to counteract all the things I’ve been doing to my body over the holiday season I’ve been trying my best to eat healthier. Its been rabbit food for most of my meals lately. Except for an occasional treat when I’m out of the house, I’ve been very good.
.
Today I made myself a salad for lunch. Despite having the benefit of holding office at my Mom’s house and having the luxury of free lunches, I decided to stay true to my bond with green leafy stuff. It doesn’t help me one bit to indulge in my Mom’s penchant for yummy, greasy, children’s party food which she loves making for her grandkids. Nope, not now.

My salad is simple. Some mixed greens, tomatoes, olives, and leftover Christmas ham. For my dressing I’m having a few tablespoons of fat-free Ranch dressing. Nothing fancy. I might have some boiled egg with it or maybe some cheese. I still haven’t decided. Whatever it is, it will definitely be healthy. I don’t plan to be cashing in on my term life insurance any time soon.

    I have that kind of salad sitting in the fridge :D

    Mine has greens carrots and I will add cheese when I have it for lunch. No more tomatoes, been used for the omelet.

    This one looks yummy. I love leafy greens especially when my salad has sweet yellow bell peppers. The problem is that I’m not a fan of vinegar and oil based dressings; I always end up using Caesar’s or Thousand Island which totally defeats the purpose of dieting. I think I’ll try having your fat-free Ranch dressing.

    Ang ganda ng photo – the veggies look so fresh and crisp. I need to eat more veggies and fruits myself. I gained xx pounds over the holidays. :(

    this is very healthy indeed. I also try to lessen my guilt post-holidays by eating more veggies…well, at least I used to…This time I seem to have a harder time doing so…:(
